Ingredients You Need For Chicken Biryani

Ingredients for Chicken Biryani:

  1. Chicken, large pieces with bones- 1 kg
  2. Basmati Rice- 700 gms (4 US cup measure)

For Cooking Chicken:

  1. Onions, sliced- 400 gms (around 5 medium sized onions)
  2. Ginger Garlic paste- 2 tbsp
  3. Tomatoes, sliced- 4 medium
  4. Green Chillies, slit- 6 numbers
  5. Coriander leaves, chopped- 1 cup
  6. Mint leaves, chopped- 1 cup
  7. Whisked curd/plain yogurt- 1 cup Ready made Biryani Masala- 5 tbsp

For Cooking Rice:

  1. Shahjeera (caraway seeds) – 1/2 tsp
  2. Green cardamom – 4
  3. Cloves – 4
  4. Cinnamon- 2 pieces
  5. Salt- 2 1/2 tablespoon
  6. Water to boil the rice- around 2.5 litres
  7. Mint leaves – around 10- 15 leaves

When it comes to making chicken biryani, you’ll need a few key ingredients.

Yes, it’s a lot, but trust us, each ingredient plays a crucial role in bringing out the flavors of the dish.

The Importance of Preparing Your Ingredients

Before you start cooking, it’s essential to prepare your ingredients. Clean and wash the chicken pieces, slice the onions and tomatoes, and chop the coriander and mint leaves.

Whisk the curd and set it aside, and wash and soak the Basmati Rice for 30 minutes. This may seem like a lot of work, but trust us, it’s worth it in the end.

Take a moment to appreciate the aroma of the ingredients as you chop and prepare them. It’s amazing how the smell of onions and ginger can transport you to a different time and place. 🌿

Cooking the Chicken to Perfection

To cook the chicken, heat 6 tablespoons of oil in a heavy-bottom pan and add the sliced onions. Fry them on high heat for around 12 minutes, until they’re light brown. Then, add the ginger garlic paste and fry on low heat for 2 minutes.

Add the chicken pieces, mix well, and fry on high heat for 2-3 minutes. Don’t forget to add the ready-made Biryani Masala, mix well, and fry on medium heat for 3 minutes.

Add the sliced tomatoes, mix well, and cook on medium to low heat for 4-5 minutes, until they’re soft. Keep the heat on low and add the whisked curd, giving it a good mix.

Add the chopped coriander and mint leaves, and cook on low heat for 2 minutes, until the oil separates. Cover and cook on low heat for around 20-25 minutes, until the chicken is tender.

Cooking the Rice to Flawlessness

To cook the rice, take a separate heavy-bottom pan and add around 2.5 liters of water. Place it on high heat and add Shah Jeera, green cardamom, cloves, cinnamon, and salt.

Stir well to dissolve the salt completely, and once the water starts boiling, add the strained Basmati Rice. Stir gently to not break the rice, and continue to boil on high heat for 8-9 minutes, until the rice is almost done. Remove from heat and strain the water.

Layering the Rice and Chicken

Now it’s time to layer the rice and chicken. Take a heavy-bottom pan and spread half the cooked rice as the first layer.

Then, spread the cooked chicken with gravy on top of the rice, followed by the remaining rice as the top layer.

Sprinkle some mint leaves on top, close the lid, and cook on low heat for 7-8 minutes. Allow it to rest for around 20 minutes before serving.
